If you think about it, we are not so different from these olives. We might look one way on the outside, but each of us has something surprising inside of us. Sometimes it surprises other people, but often it even surprises us. Depending on how we look at one another, we might never see that surprising thing. We might miss out on a central part of other person's being.
And also, just as the pimento inside an olive is red, so is the inside of a person red. Like, from the blood and stuff.
